CCA offers professional training through courses in culinary arts, baking and pastry arts, hospitality and restaurant management. These hands-on cooking classes and lecture courses will give you the skills that are necessary for future positions in the culinary and hospitality fields. Your quality instruction in classical and contemporary culinary techniques, business management, wine appreciation, and hotel operations from the California Culinary Academy will allow you that important boost toward a career in the art of living.

An Associate of Occupational Studies (AOS) Degree in Le Cordon Bleu Culinary Arts is a 60 week long program, designed to prepare you for various positions in culinary related businesses. Coursework blends the techniques of classical and modern culinary arts with excellent kitchen management skills, readying you for your professional entry into the food service industry. Through the Le Cordon Bleu Culinary Arts Program, you will have an understanding of worldwide cuisines, with emphasis on the principles and procedures of their culinary arts, as well as their history, evolution, and diversity. Students of the Le Cordon Bleu Culinary Arts Degree Program complete the curriculum with a 12-week internship.

The Baking and Pastry Arts Certificate Program is 30-weeks long, delivering wide ranges of study related to baking and pastry techniques, thereby preparing students for positions in bakeries, pastry shops, hotels, restaurants, and in-store supermarket bakeries. There is emphasis on hands-on application of fundamental techniques/ingredients and evaluation of various international recipes. The design of the program also directs extensive training in safety and sanitation, nutrition, and human resource management.

An Associate of Occupational Studies (OAS) Degree of Le Cordon Bleu Hospitality & Restaurant Management is a 45-week long program of coursework which combines solid managerial principles with basic culinary skills. This enables students to achieve their goals in the hospitality and foodservice industries. The curriculum covers both front of the house and back of the house operations, as well as the following study topics: hotel operations; wine studies; restaurant management, accounting, and law; human resource management; mixology/beverage service; gaming/casino management; basic culinary arts training; and professional communications.

The student life program is very active at CCA and is designed to complement the Culinary and HRM programs. Conveniently located student housing is also available for many students and CCA offers financial aid and tuition planning assistance. There is gratification at the California Culinary Academy achieved through helping its graduates secure important positions in resorts, hotels, restaurants, bakeries, and other quality businesses related to the culinary and hospitality industries. Each student is offered individual sessions in resume writing, interview preparation, and career planning.
